For the past week, I’ve been making a new recipe that I can easily say I’m obsessed with at the moment.  I’ve eaten it every night.  Every.Damn.Night.  Introducing….My Cheesy and Spicy Sausage Melt Recipe.

Cheesy Spicy Sausage Melt

I’ve been counting my macros lately and I have a tendency to eat a ton of carbs during the day.  When it comes time for dinner, I realize I need to catch up with my protein intake.  I wanted to create a tasty night time meal to have that is protein heavy and carb-light.  This recipe is perfect for that and it’s oh-so yum-yum!

It takes about 5 minutes to make which makes it even better.

Ingredients:

  1. 3 Egg whites
  2. 3 Turkey Sausage Links (I used Jimmy Dean’s fully cooked frozen ones)
  3. 1 wedge of Laughing Cow Cheese – Light Queso Fresco & Chipotle flavor

The recipe instructions are pretty complicated…I hope you can handle it…

  1. Step One: Throw the sausage links in the microwave for about 40-60 seconds.
  2. Step Two: Mix all ingredients together in a frying pan and cook until eggs are done and ENJOY!

If you’re eating this in the morning, I’d suggest adding in some carbs.  Never limit your carbs early in the morning.  Add a slice of ezekiel bread to this meal to make it more balanced.  mmmmm yum!!
