A Wedding, DIY Projects and my Cheesy Bacon Chicken Roll-up Recipe

Oh hey!!!  It’s been a while since I posted a personal update about what I’ve been up to so I figured I’d do a recap of my past week.

Last weekend we went to a wedding out in the country in Indiana.  The bridal party wore cowboy boots and and the reception had horses!

The wedding was in a BEAUTIFUL tent outside at the bride’s parent’s property.  She NAILED it on the design..it was absolutely beautiful.

Me and the big guy all dressed up for once!  Sometimes it’s so nice to get out of my Nikes and Lulus and put makeup and a dress on!  I love dressing up!

They also had some chinese lanterns that we lit up and let off into the sky.  SO CUTE!

We had a LOT of fun with friends and family at this wedding.  We danced the night away and got super goofy!  It was perfect!

This week I went went to the gym Mon, Tues & Wed so far.  I’m hoping to go today at lunch as well.  I won’t be able to workout at all this weekend though…so that sucks!

Here’s how my workouts looked this week.  I need to stay focused…only 32 days away from my trip to CANCUN!!!

Mon – Chest/Shoulders/HIIT

Tues – Back/Biceps/Cardio

Wed-Legs/HIIT

I also made this unbelievably delicious chicken roll up on Wednesday night!

CHEESY BACON CHICKEN ROLL-UP RECIPE

Ingredients:

  • 4 oz chicken breast
  • 2 pieces of turkey bacon
  • 1 wedge of garden vegetable laughing cow cheese

Recipe:

Flatten your chicken so it’s as thin as possible.  Cook turkey bacon in microwave for one minute then add on top of the piece of chicken.  Add one wedge of Laughing Cow cheese on top of the bacon and chicken.  Roll up the chicken and secure the roll with toothpicks.  Bake at about 400 for 25 minutes or until temperature of chicken reaches 165-170 degrees.

It was SOOOOOOO good!

On top of all the cooking, gym time and weddings, I’ve also managed to do some DIY projects at home.  I organized my hallway half depth closet FINALLY.  We had to use half of this closet to expand our shower behind it, so it’s only used for a utility closet for our cleaning supplies.  I bought this awesome wall organizer from Amazon this week and it makes the space so much better!  The best part was that it was only $11!

I also ordered a new entry door knob set.  You guys all know I’m a sucker for any type of gadget so I went all in and bought a sweet keypad entry door knob made by Schlage.  Now when I go out for a run I don’t have to bring  a key and can just type in my code to get in the house.  SWEET!!!

Beside the Mister Ed reference earlier, I just realized I got super excited about a closet organizer and door knob…I guess I AM getting old!!! Wow!

Even though it took me about to 3 hours to install that sucker…I think it was worth it.  Don’t worry.. my next project is to repaint that chipping door!

This could have been my most random post of all time, but hey….it’s Friday and I don’t care!!! Have a great weekend everyone!
