Taco Balls Recipe

I don’t know about you, but I LOVE Mexican food.  If I have a cheat meal, it’s always Mexican food or pizza.  I wanted to make a Mexican type of recipe that is clean and healthy, so I whipped up some Taco Balls!!!

They turned out really good and the nutritional content is great too.  I’ve been eating them non-stop for the past couple days and am excited to have them again for Meal 3 today 🙂

Ingredients:

  • 2 lb lean ground turkey (I used 99% Extra Lean)
  • 1 Can corn ( I looked for the kind with the lowest sugar content)
  • 1 Cup Oats
  • 1 Can black beans
  • 1/4 cup chopped yellow onion
  • 1/2 package taco seasoning (reduced sodium)
  • 1/4 cup low fat cottage cheese
  • 1/4 cup liquid egg whites

The directions are simple!

I mixed all the ingredients together in my FAVORITE mixing bowl….

Form into racquetball sized balls and place on a greased (with cooking spray) pan.  I used a circular pizza pan with holes in it.  I had too many balls to fit on my pizza tray, so I made another smaller batch on a normal cookie sheet and they turned out just as tasty.

Preheat the oven to 450 degrees.

Place the taco balls in the oven in the middle rack.  Cook for about 40-45 minutes or until they are lightly brown.

This recipe made 32 taco balls.  I think a good serving size for this recipe is 3 balls.

  2. What purpose does the cottage cheese serve. My daughter is allergic to dairy. Could I leave it out or substitute it w something else?
