I don’t know about you, but I LOVE Mexican food. If I have a cheat meal, it’s always Mexican food or pizza. I wanted to make a Mexican type of recipe that is clean and healthy, so I whipped up some Taco Balls!!!
They turned out really good and the nutritional content is great too. I’ve been eating them non-stop for the past couple days and am excited to have them again for Meal 3 today 🙂
Taco Balls Recipe
Ingredients:
- 2 lb lean ground turkey (I used 99% Extra Lean)
- 1 Can corn ( I looked for the kind with the lowest sugar content)
- 1 Cup Oats
- 1 Can black beans
- 1/4 cup chopped yellow onion
- 1/2 package taco seasoning (reduced sodium)
- 1/4 cup low fat cottage cheese
- 1/4 cup liquid egg whites
The directions are simple!
I mixed all the ingredients together in my FAVORITE mixing bowl….
Form into racquetball sized balls and place on a greased (with cooking spray) pan. I used a circular pizza pan with holes in it. I had too many balls to fit on my pizza tray, so I made another smaller batch on a normal cookie sheet and they turned out just as tasty.
The leftovers that wouldn’t fit…
Preheat the oven to 450 degrees.
Place the taco balls in the oven in the middle rack. Cook for about 40-45 minutes or until they are lightly brown.
This recipe made 32 taco balls. I think a good serving size for this recipe is 3 balls.
I wanted to break down the nutritional content for you.
The nutritional break down for 3 balls is listed below.
Only 2.6 grams of fat and 25.5 grams of protein! OOOHHH YEAH!
Now if you want to change the serving size, here is the nutritional breakdown PER ball.
Only .9 g of fat and 8.5g of protein in each one. 🙂

I will have to try this recipe, Mexican food is my weakness too!
whoa yumminess!
YUM those look amazing!
I made them last night! I thought they were great, I topped them with salsa to give them a little more zing! I’ll be eating them for lunch and on my road trip today!
Yay!!!!! I’m so glad you liked them as much as me. I also topped mine with salsa 🙂
hi!
Do you drain the corn and black beans or pour it all in?
If I remember correctly I think I drained it halfway and left the other half in there.
What purpose does the cottage cheese serve. My daughter is allergic to dairy. Could I leave it out or substitute it w something else?
Protein! It also kinda keeps the balls together. 🙂
Made these for dinner tonight! Super easy and very delicious! Thank you!
How do you store these? Fridge? Then heat and eat as you go? Stay good for about a week or less?
Yep! You got it!
I made these last night and they delicious!
