It’s been a little over a week since I started clean eating (except for clean eating vacation on St. Patty’s in Chicago). I seriously can’t believe the changes that I’ve seen in my body in the past week! I haven’t really changed up my workout routine all that much (maybe a little more cardio, but not much). The biggest change is my 6 small meals a day of CLEAN FOOD.
Here’s a look at the past two days of my foods…

When I started eating clean, I was already at my “goal weight” I’ve always pictured being at since high-school. After a week of eating clean, I’ve shed some more fat. I’ve lost several more lbs and I can feel myself tightening up completely and getting stronger! I don’t want to lose any more weight so I’m going to try to up my calories from now on. I don’t want to lose any muscle.

I roasted a boneless turkey for the first time. It was pretty good, but I’m terrible in the kitchen. I always get too nervous that I’m going to give myself food poisoning so I freak myself out about how well it’s cooked. It was good and juicy…I was just nervous it wasn’t cooked all the way. I didn’t get sick though..so I guess I can eat the left overs…right?!
This little lunch snack quickly turned into this…
A tuna sandwich on rice cakes!! It was actually pretty good. The rice cakes crumbled a bit when I ate it, but it was a nice addition to my tuna (since I didn’t add any mayo or anything)!
Here’s last night’s feast. I put chicken, veggies and sweet potatoes in the crockpot yesterday while I was at work. The chicken turned out great but the veggies and potatoes were like mush. I may have put too much water in the crock-pot.
Any idea why the veggies and potato tasted like water and like mush?
I’ve been preparing my food all week in little baggies. Take a look at my fridge..it’s all organized and cute 😉
I’ve got my protein on one shelf, veggies on the left and fruit on the right. Most of my starches are in the cabinet next to the fridge. I love being organized 🙂
As for my workouts…Tuesday I lifted legs and abs. I’m still suuuuper sore in the hip area from that workout. I did a new exercise called a lateral tube walk that really works your hip flexors. I feel like an old lady every time I get up and think “OWWW MY HIP!!!”.
I also added in 30 min of steady state cardio on the treadmill on Tuesday. I burned 822 calories at my gym session on Tuesday! wahoooo!
Yesterday was a “cardio only” day for me. No lifting. Because it was nice out, I decided to take my dogs for a run. One of my dogs is 8 and loves running. The other dog is only 5 months and this was her first run. She didn’t do so well with it so I dropped them off at home and continued some HIIT outside in the neighborhood.
I always do “Driveway HIIT” in my neighborhood. I will sprint until the next driveway I see…no matter if it’s a short or long distance..however it comes. I’ll then walk to the next driveway. The houses are spread a bit apart, but not too far. Sometimes you get unlucky and have a really long sprint, but then other times the driveways are right next to each other. It changes things up! I ended up running about 2.3 miles in the half hour I spent around the “hood”.
I love being creative with my workouts..it really keeps things interesting!

Overcooking your veggies will cause them to get mushy. Sturdy veggies like carrots and potatoes are alright in a crockpot, as long as you cook on low all day. Delicate veggies (basically anything green) will cook very fast and should only be in the crockpot for 1-1.5 hours at the very end of the cooking time. I hope this helps for next time. I love using my crockpot for easy clean dinners that cook while I am at work!
