It’s Chili Season baby!

Happy Fridizzle everyone!!! I SO need a weekend right about now. I feel like it’s been a long week. Working out 6 times a week gets really, REALLY draining!

I don’t have many plans for the weekend yet. I’m hoping to workout after work and then have a relaxing night tonight. Maybe I’ll get a little crazy and start up the fireplace and have some wine. I’ve never been a big wine drinker but whenever I have it, I usually like it. I haven’t gotten into any red wines yet, I’m still on the white wines. Everyone always says you start light and go darker as you drink it more often. Well…I’m still on the white side.

Anyone have any good suggestions for wine? What’s your favorite?

For lunch today, I went over to When Eddie Met Salad because I was feelin the need for green. I created a salad with Romaine, Fat Free French Dressing, Corn, Eggs, green olives, strawberries and tortilla strips for some crunch. It was so delish.

After work I headed over to LifeStyle Family fitness to kick Day 52’s butt. It was chest/abs/cardio day.

My least favorite thing about this workout: 4 sets of bench dips. I did these dips off a normal bench and my arms were shaking. I have a hard time with them but I have to keep thinking to myself that it hurts so good!

My favorite part of this workout was my 30 min of moderate intensity cardio. The only reason I liked it this time was because I got to watch the first episode of “Scouted” on E!. I thought this show would be cute, and it totally was. They scouted a 15 year old girl to become a model. Within a few days she was flying out to NY to sign with an agency. She was adorable. Why can’t this shiznit happen to me? Watching this made my 30 min fly by. I was actually a little sad I had to stop because I didn’t get to see the rest of the episode. Oh well..catch ya on the flip side Scouted.

I was craving some chili after my workout. I decided to whip up some chicken chili. It turned out scrumptious!

I made a HUGE batch of it so that Ryan and I can have a bunch of leftovers. This picture makes it look like it’s a huge troth in a lunchroom waiting for a classroom of students to dig in. What can I say..I like leftovers and we eat a LOT.

Chicken & Bean Chili Recipe –

 

Ingredients (All the ingredients are pictured above):

2 lbs of Ground Chicken (I used Fit-n-easy)

1/4 cup of chopped onion

1 can of organic black beans

1 can of organic great northern beans

1 can of organic tomato sauce

1 can of golden sweet corn

1 jar of salsa ( I used medium but use whatever spice you want)

2 tbs of brown sugar ( I used zero calorie brown baking sugar – in bag pictured above)

Recipe:

Add onions and chicken to skillet.  Let the chicken cook until there is no more pink on chicken.  Mix often.

When chicken is cooked, add it to a big pot.  Add all of the other ingredients to the pot and mix.  Bring the pot to a boil and then lower the temperature so it’s simmering for about 10 minutes.  Serve and enjoy 🙂

It was great.  Even the boyfriend loved it!  The best thing about this recipe is that it’s healthy! I see a lot of chicken chili leftovers in my near future.

Let me know if you try it and what you think.  It was so easy to whip together.  I love chili in the winter 🙂 Is it even techically winter yet? I don’t know but it sure feels like it!

  1. I am anxious to try some of these recipes! In the Taco Balls and the Chicken Chili recipe it doesn’t say whether or not to drain the beans and corn. I would think in the taco balls you do, but what about the chili?

    cool recipe and nice blog. Trying to start a fitness blog myself. It’s hard work!

    Just wanted to know what iPhone apps you used here, they look handy. Is that like a custom calorie counter for your own meal?
