Egg, Bacon and Green Pepper Muffins on Day 32

I’m so glad it’s Thursday..the weekend is so close! Yesterday I worked the usual full day followed by a visit to the gym for Day 32 of LiveFit training. It was Arms, Abs & Cardio day. This workout seemed to take longer than normal. I was at the gym for almost 2 hours! Gosh I remember the days I never understood how my boyfriend could spend 2 hours at the gym…well, now I understand!

Here’s a snapshot of my lifting for the day.

I had a little easier time this week doing a barbell curl of 30 for 10 reps (3 sets).  Last time I did these I was struggling to finish so I’m glad I got through it a bit easier this time.  This girl is getting stronger 🙂  For abs, this was the first time I’ve ever done jackknife sit-ups.  They are HARSH.  I felt so akward doing them because my legs and back never formed a perfect “V” like they are supposed to.  I felt sloppy but I got through them with a killer burn in my abs. 

After lifting for about an hour and 15 minutes, I headed to the treadmill to do some medium intensity cardio.  I’m still trying to wrap my head around medium intensity cardio..since I always push myself too hard.  I’m trying to stay around the 140bpm heart rate.  It’s hard for me to stay low..so most of this workout I was around 160ish. I treadmill’d it up for 36 min and called it a day.

After my workout I headed to the grocery store to get some food for dinner.  I picked up a carton of egg whites, fat free shredded cheddar and a green pepper.  I decided to make some egg muffins with turkey bacon and green pepper and cheese.  They turned out pretty darn good..and VERY healthy!

Recipe:

  • Preheat oven to 375 degrees.
  • Add 3 teaspoons of egg whites to each muffin tin.
  • Spread out 1/2 green pepper (diced) throughout the muffins.
  • Preheat 4 strips of butterball turkey bacon in the microwave and distribute them within the muffins.
  • Cook at 375 for about 40 minutes.  I then took them out of the oven to sprinkle a teaspoon of fat free cheddar on each one and put back in the oven for just a minute to melt.

They were perfectly portioned muffins.  Here is the breakdown on nutrition:

  • Serving Size: 1 egg muffin
  • Calories: 45
  • Fat: 0g
  • Carbs: 1g
  • Protein: 8g
  • Sodium: 190mg

Now those are some good numbers!!! Fat free and only 1 carb with lots of protein.  I’ll take those numbers any day of the week!

  2. I’m really glad I found your blog series on the Livefit program. Today is my Day 32 and I’m going to the gym soon. This gives me a fair idea what I should expect and not be discouraged if I feel like I’m KILLING myself! Thanks for sharing this…
