Last night I made some bacon, egg and cheese muffins! They turned out pretty darn good. They puffed up a ton in the oven, but then get much smaller after you take them out of the oven.
Bacon, Egg & Cheese Breakfast Egg McMuffins
– 3 Egg Beaters cups (or 6 eggs)
– 1/2 Cup of Cheese
– 4 strips of turkey bacon
– Salt and pepper to taste
Pour all of the egg beaters into a bowl, add in the cheese, salt and pepper and mix. Poor the mixture into a muffin pan to make 12. Cook the bacon. Break off pieces of the bacon and place them on top of each Egg McMuffin. Preheat oven to 350 and cook for 25 minutes or until the middle of the egg is set and starts browning.
They turned out pretty darn tasty! I added some salsa to spice things up a bit. Great for any time of the day and were only 35 calories each!
I also went grocery shopping at the “suck you into buying everything you don’t need” store, Target. I ended up with a bunch of stuff including more protein powder and more chewy vitamins. I tasted the vitamins as soon as I got in the car and they were SOOO good. They are the generic Target brand and better than the name brand ones. They were much softer and more flavorful.
I made the mistake of leaving the jar of gummies in the car while I went back into finish the day off at work. I came back to the car to find them all MELTED TOGETHER! I almost cried!! I’m so mad at myself. Who does that? I guess I just didn’t think that would happen to my new favorite gummies. Well that was $8 down the drain. Thank you black car with black leather..I blame this partially on you!
I hit up the gym last night and lifted legs. I did a whole crap load of squats, lunges and machines. My legs were dead but I managed to run 1.25 miles. I know that’s not much, but it’s hard after lifting legs pretty hard! I’m also concentrating on building more muscle, so I’m not as concerned with cardio right now. Overall, it was a successful workout and I was happy with it.
I came home and got to catch the end of American Idol to see Lee win! Woohoo! I was rooting for him because he’s hot, great voice and from around Chicago 🙂
Another fun picture from recently, My friend’s dad has awesome, and I mean awesome as in 7th row behind first base season tickets at Wrigley Field. Well my friend send me a picture of my other best friend shaking the owner of the Cubs hand, Tom Ricketts! Well the picture must have just missed it because it looks like she’s blowing him off. haha. I think it’s such an awesome picture to have the owner of the cubs which is the team who has my heart, and my best friend!! I’m so jealous!
It’s almost Friday kids! This weekend is the Indy 500 long weekend in Indianapolis, so it’s going to get very very very nutty. Lots of booze and hot weather in store for me. Temps are supposed to be sunny and 85 for the race. I’m gonna be a sweaty, drunken mess on Sunday. The race is fun because it’s one big tailgate with a whole bunch of LOUD race cars racing around you. It’s just a bunch of drunks screaming to each other trying to talk over the race cars noises. It’s a lotta fun. 🙂
I’d totally take the vitamins back to Target for an exchange. I promise you they’ll do it…

Maybe i’ll have to consider taking them back. I threw out the recipt already, but maybe they will just let me exchange. You’re right, they are usually really good at returns.

They had about 5 grams of protein in each one.
Those muffins look great! Isn’t is funny how eggs shrink when you bake them? It’s so weird.
