Peanut Butter Sweet Potato Fries

I’ve heard a lot about Amy’s frozen meals and decided to buy a few different ones to give them a shot.  They are appealing because they are natural and organic.  I tried the bean and rice burrito yesterday for lunch.

It was really tasty for a frozen burrito!  I will be getting this again.  The only down fall is that Amy’s frozen foods seem a bit pricey.  For the taste and the fact it’s organic and natural, I think I may pay the extra few cents for this better quality.

I paired the burrito up with some blue tortilla chips and hot salsa.  Yummy meal for 440 calories!

For dinner I was craving another Jennie-O turkey burger.  I put four on my cast iron and let them roll. 

You can see by the picture below how much steam comes off the burgers from the grill.  Make sure to open a window or 5!!

I also made some sweet potato fries mixed in peanut butter.  I cut the potato, covered the slices in peanut butter and some salt and threw them in the oven at 400 degrees for about 45 minutes.  They turned out great!!  It would be better if there was a little more PB though.  Everything is better with PB!

The BF and I then went to go look at some real estate and to check out his house he’s flipping.  It’s coming along quite well and the house across the street just sold for a good price.  That’s a good thing for them!  On the way home we were went to the grocery store to buy some fruit. We actually went into the grocery store to pick up a red box movie, but couldn’t find any good movies we wanted.  We ended up wandering into the fruit isle and going nuts.  He got so much fruit and goodies and I made myself a small salad.

We went home to watch the Real World Road Rules Fresh Meat challenge and eat our goodies.  The show was good and gets me pumped up for our Survivor challenge I’m doing on June 5th weekend.  I’ll have to tell you guys more about it later. Basically I’m doing a Survivor weekend out in Kentucky.  I’ll explain more later.  That’s why I’m trying to get strong now though.  Gotta get ripped for Survivor!!!

Good ending to the night.  Why am I such a picky eater, but LOVE green olives?  It seems very odd.  Whenever people know me and find out I like green olives they are shocked.  Apparently not many people like green olives.  I love them!!  Do you like green olives?

It’s almost Friday!!! Tomorrow I’ll be out of the office all day.  We have our company’s Associate Track Day where we go to the Track where the Indianapolis 500 takes place and we walk around on the track, they feed us and we can sign autographs with the race car drivers.  Pretty cool, except I’m not really a race car fan.  I’ll do anything to get outta work for the day though!!!

Saturday I’m heading to Cincinnati for a bachelorette party with my girls! Should be fun!!
