Chicken Chili

I did the Shred (level 1) and Tread again last night right after work.  This time I upped my speed a little to 7, 7.5 and 8.  I was sweating bad.  I absolutly hate circuit 1 of the Shred level 1.  I hate going from push ups to squat & press, back to push ups & back to squat and press.  My arms aren’t strong enough still do this this completely.  I usually have to take a couple rep break or switch to 3lb dumbells in mid circuit.  Hopefully I’ll be able to complete it someday with the 5lb dumbells without slowing down at all or switching to 3lb’ers.

Last night I finally made chili for the first time.  It turned out to be a huge success!  I made it with chicken instead of beef and the BF loved it because it had a lot of meat in it.  He’s such a meat head 😉 

I also made some of my own garlic bread which was a first for me too.  I spread some ICBINB and garlic powder on it, popped them onto the pizzazz pizza cooker and they tasted great.

We added oyster crackers to the chili to top it off to perfection.

Chicken Chili

  • 2 lbs of ground lean chicken
  • 1 jar of medium salsa
  • 1 can of tomato paste
  • 1 can of Northern beans
  • 1 can of corn with peppers
  • Pepperjack cheese
  • Taco seasoning

I’d recommend this chili to anyone!  It also wasn’t bad nutritionally.  The oyster crackers and garlic bread are what put me over the top.

 After dinner we did a “hurry up and clean up” because the BFs brother had just flown in from Germany for the week.  The BFs brother, mom and step dad came over around 9 and left around 11.  That group always stays up late, but it was a struggle for me!  I’m such an old lady when it comes to sleep.  I didn’t care though because it’s Fridiiiizle and I’m pumped!

As for my weekend plans, tonight I’ll probably hang out at home and get some stuff around the house done.  Tomorrow we have to go to a baby’s 2nd bday party, followed by my friend’s Couples Shower (which I still have yet to get a gift for!!), probably followed by a trip out of town to go spend more time from the BF’s brother who lives in Germany.  Saturday will be super packed again, as always.

  1. Wow talk about a busy weekend! I could eat a whole loaf of garlic bread as my meal, especially the Pepridge Farm Garlic Mozzarella bread, soooo good!
