Jillian Michaels The Shred Level 2 DVD

I started my Tuesday with a green Granny Smith apple and reduced fat peanut butter. I am probably one of the few food bloggers that loves peanut butter but doesn’t eat it much. When calorie counting, I have such a hard time understanding and accepting that it’s okay to eat. I know that there are a lot of positives to peanut butter, but the calorie and fat content is just too high for me. I love it though, I wish it was lower in cals/fat. I could eat it straight out of the jar every day! I decided to splurge today and have some on my apple. Yum – I wish I had more of that in my life!

For lunch I decided to not eat out or go shopping, but go home and make a healthy meal since I spent about $100 at the grocery store on Monday. I have no clue how my bill always gets so high at the grocery store! It always gets me.

I made a fruit salad with lettuce, apple, grapes, strawberries, fat-free french dressing and cracked up some Special K wheat crackers to top it off. It was really good and only totaled 215 calories!

Afterwards I wasn’t full so I had some more Special K Whole Wheat crackers and tried a Jell-O Mousse Temptation.

It was pretty tasty. I have never had mousse before, so the texture was very unique. It’s like a mixture between pudding and whipped cream. It was a caramel/chocolate flavor and satisfied my hunger and sweet tooth for only 60 calories. Even my boyfriend really liked it, and he doesn’t like much of the low-calorie stuff I buy. This makes me wonder if I can make my own mousse recipe for a desert? Does anyone have any recipes?

I was starving right when I got home from work and I wanted to try to make a sweet potato. I’ve only tried to cook a sweet potato on my own one time before, so this was new to me. One half I threw in the microwave and put butter and a little salt on it. It was pretty delicious.

With the other half, I wanted to try to make sweet potato fries.  I ended up using garlic, brown sugar and cinnamon to bake them in.  They turned out great.  Maybe a little burnt..but great for the first time making them!

Finally, I wanted something cold so I made some cereal.  How could I leave out breakfast at night?  This has been a Breakfast in the P.M. themed week for me.  At the store I bought some Almond Breeze Milk.  I really liked it and think I’ll add it to my normal grocery list.  It’s only 20 calories per half cup (however a little more fat then reduced fat milk).  The Kashi 7 Grain Whole Grain cereal was also very light and yummy.  I’m a fan.

As for my fitness, I went on a run outside yesterday because it was nice again.  No more rain.  I ran around our neighborhood for 2.43 miles at a 8:30 pace according to my Nike Plus.  Ran for 21 minutes and burned 250 calories.  Nice!

I became bored and nothing on TV was entertaining me.  I really could care less about American Idol this season.  I only like that one guy who plays guitar and has longer blonde hair… and Big Mike of course.  Anyways, I decided to go waste time and money at Target.  I bought some really cute cardigans that were on sale.  I always wear them to work and wanted some fun spring colors so I got purple, white and a brown.  You can wear these with everything. LOVE TARGET!!

I came home from The Best Store In The World and decided to try out The Shred Level 2.  WHEEWWWWWW Jillian kicked my butt and I was sweating an insane amount!  I hated it while I was doing it, but now I kind of want to do it again. 

On a great note, I’m back on track with my weight loss.  I’m back to 10.4 lbs lost after my insanely fatty weekend 🙂
