I Finally Made A Spinach Smoothie (Green Monster)

After many days of skepticism from reading other blogs, I decided to see what all the rave was relating to the Green Monster drink that many of you drink daily.  After my run last night, I popped a few things into the blender, INCLUDING some spinach and mixed it all up.  If you remember from a few days earlier, I was talking about how I don’t like spinach.  I bought some and gave it a go but didn’t like it when it was cooked into my meal.  I didn’t want to give up completely so I thought, why not put this leafy stuff into a smoothie?!? Who WOULDN’T think that, right? haha.  There’s no chance in hell that I would’ve tried this without the reviews of many of my fellow bloggers.  Here’s a picture of how it turned out.

Verdict: It was actually GOOD!  I was so shocked.  Because I put a frozen banana in the drink, all I could taste was banana.  I was so pumped about it being good and me actually liking something with spinach in it, that I made some this morning for breakfast!!  Thanks Bloggers!!!

Yesterday for lunch I had a meeting through lunch.  Who wants to sit through a meeting during the lunch hour? This should not be allowed.  Lunch was served however, so I can’t complain about free food.  It was a salad bar.  I had the same problem as Amy had the other day.  Why are there never options of healthy, low-calorie/fat dressings with salads!?!  It’s not that hard to include just ONE healthier option.  I had no choice but to go for the italian because it’s usually healthier than the creamy dressings.

After work I made one of my favorites – a bacon, egg and cheese sandwich! This is one of the few recipes that got me through college.

My favorite part is only the slightly cracked open egg yolk.  It makes it perfect.

After dinner I decided to test out my time at a 5k.  I’m running my Race For The Cure mid April, so I thought I’d time myself and go for a jog around the neighborhood.  I definitely had a hard time with it.  I couldn’t run the whole time and ended up walking a few times and doing some short sprint intervals at the end.  Overall, I finished my 5k with a time of 27.55 minutes at an average pace of 8.53mph.  I burned 330 calories.  Not as bad as I thought it would be since I walked a portion of it. 

That’s all for now.  It’s Friday and don’t have much planned for the weekend except watching some basketball.  GO BUTLER!

    And sorry to hear about your similar salad woes… I’m not a huge fan of Italian unfortunately (probably why I sucked it up and had caesar, even if I wasn’t feeling it the other day). But it looks like the salad was a good one!

  2. I think its pretty amazing that you cant test spinach in a smoothie. I love it huh!

    And bacon…yum! I love just plain bacon sandwiches on toaste bread with mustard. Delish.
